Horchata or, in Valencian,
orxata , is one of the drinks of Valencia, originating specifically in Alboraya, the municipality to which Port Saplaya belongs, where the
Port Saplaya Apartments are located.
Horchata is a drink made from tiger nuts, a tuber typical of the Valencian garden, specifically from Horta Nord, thanks to the special characteristics of the area in terms of soil and climate. It is traditionally considered a drink with countless health benefits.
Origin of horchata
There are different legends associated with the origin of horchata. Below, we share the one told by the Regulatory Council DO Chufa de Valencia
A young woman gave the King of Aragon, Jaume I, a sweet white drink to try. Jaume I liked it very much and asked: " Què és això? " (What is this?). The young woman replied: "It's tiger nut milk" to which the king replied: " Això no és llet, això es or xata! " (This is not milk, this is gold, my dear!).
The cultivation of tiger nuts dates back to the Egyptian civilisation, as the presence of tubers was found in sarcophagi and tombs of the first dynasties. From Egypt, the cultivation of tiger nuts spread throughout North Africa, reaching the Mediterranean area of the peninsula with the Islamic waves of the Middle Ages. There is written evidence that in the 13th century a refreshing drink called llet de xufes was already consumed, the predecessor of today's horchata.
Ingredients of horchata
In the preparation of horchata, the main ingredient is tiger nuts, which must be soaked for a few hours beforehand (between 6 and 8). Next, the tiger nuts are ground and mixed with a little water. Then, sugar, lemon peel and a little cinnamon are added and we continue stirring. Finally, we strain the mixture to obtain the horchata.
